V60 Brew Guide

What you'll need:  V60 Dripper Size 02 or 03, V60 Filters, Brewing vessell, Pouring Kettle, Digital scales, Timer, Coffee grinder

A type of percolation that is our go to method of brewing coffee on a daily basis. We love brewing filter coffee this way as it results in crisp cups with wonderful clarity and complexity of flavour.


For 1 large cup

Recipe:
18g of coffee ground to medium coarseness (a little finer than Demerara sugar)
300g of water (1:16 ratio)

  • Bloom for 30 sec using 65g water and swirling gently to fully saturate all grounds at the start of the brew.

  • 1st pour at 30 sec up to 200g

  • 2nd pour at 1:15 up to 300g

  • Total brew time between 3:00 and 3:20

For 2 smaller cups

Recipe:
25g of coffee ground to medium coarseness (a little coarser than for small cup)
400g of water (1:16 ratio)

  • Bloom for 30 sec using 80g water and swirling gently to fully saturate all grounds at the start of the brew

  • 1st pour at 45 sec up to 200g

  • 2nd pour at 1:15 up to 300g

  • 3rd pour at 2:00 up to 400g

  • Total brew time between 3:00 and 3:20


Troubleshooting:
If your brew takes too long to drip through adjust your grind size coarser. If it runs through too fast adjust finer. If your coffee taste watery or you’d like a more full bodied brew increase your dose. If your brew is tasting bitter try grinding coarser, if it’s a little sour or doesn’t have a lot of flavour try grinding finer.

Method:

  1. Fold your V60 filter along the seam and place in the brewer cone.

  2. Using water just off the boil (around 96C), rinse the paper thoroughly and discard water. This serves to remove any papery taste while also heating up your brewer.

  3. Weigh out your coffee, grind to medium coarseness and add to the brewer. Place all onto a scale and reset to 0.

  4. Start your timer and begin pouring 65g of water over the coffee and swirl to wet the whole coffee bed. Let it ‘bloom’ for about 30 seconds.

  5. After 30s, pour more water in slowly, in concentric circles up to 200g of total weight, ensuring the fresh water is evenly spread. At 1:15 add more water up to 300g of total weight. (If brewing for 2 cups, at 2:00 add the remaining 100g water, making it up to 400g of total weight.)

  6. Holding the edges of the v60 firmly, swirl the coffee gently to flush any high grounds into the brew. Allow to drain, reaching a total brew time between 3:00 – 3:20.
