Team Pegasing is a progressive coffee farm and processing station headed up by Hendra Maulizar, a young second-generation coffee producers based in the Aceh area of North Sumatra. Having learned about coffee production from his farther, Hendra is now pushing quality forward, moving away from the traditional wet-hulled processing and experimenting with new techniques.
He buys harvested coffee cherries from around 70 local growers and pays premium for good picking. According to weather conditions and demand he decides the processing methods for particular lots. This lot is processed using the carbonic maceration technique where cherries are put in fermentation tanks and CO2 is pumped in, pushing out oxygen. The cherries ferment in tanks for 70-80 hours before being dried on raised beds in a covered tent over 20-25 days, resulting in a cup full of big boozy fruits!
