About this coffee & Team Pegasing:
Team Pegasing is a progressive coffee farm and processing station headed up by Hendra Maulizar, a young second-generation coffee producers based in the Aceh area of North Sumatra. Having learned about coffee production from his farther, Hendra is now pushing quality forward, moving away from the traditional wet-hulled processing and experimenting with new techniques.
He buys harvested coffee cherries from around 70 local growers and pays premium for good picking. According to weather conditions and demand he decides the processing methods for particular lots. This lot is processed using the a washed method, the coffee cherries ae de-pulped and floated in channels before being fermented for 12- 18 hour in a concrete tank. Once fermented the beans are washed and finally left to dry on the raised beds for between 8 - 14 days, weather depending. We love this washed lot and it sits wonderfully next to the much more wild carbonic maceratoin natural from Hendra. With its full syrupy body, vibrant acidity and even a touch of florals it is super drinkable yet very refined and interesting cup. A real treat to enjoy on any day of the week!
