Halaka is a small area in the well-known Guji coffee growing region in Southern Ethiopia. Coffee production is increasing at high altitude in this particular area as more land becomes suitable to coffee growing due to climate change.

The Halaka washing station is operated by Buno General Trading. It sits at the altitude of 1990 masl and receives cherry from a number of small growers in the area. Buno is a relatively small exporting company with 7 washing stations across various areas of Guji. The owner and manager Abiyot has focused on producing the best quality coffee possible, searching for the highest elevations and selecting producer partners by quality of cherry delivered. He incentivises farmers by offering a very competitive premium on well selected cherry.

Producers deliver cherry to the station as they pick, ensuring that the selection is perfect, so deliveries come in one or two bag batches. These small lots are combined together based on the standard of cherry selection before they are washed and floated to remove dirt and damaged and less dense beans, after this the cherries are laid out on drying beds to dry for around 30 days.

Almost all of the coffees produced at his stations are naturals, and he has also been experimenting with various processing methods such as cherry maceration prior to drying.

This particular natural lot stood out on the cupping table for its sweet lavender aromatics, intense sweetness and pronounced blueberry notes in a clean cup with a creamy body and lasting sweet aftertaste.
